It depends on the school, but adjunct faculty at most schools are paid extremely little - usually less than $3,000 for the course. They will almost certainly not accept your teaching experience as student teaching. First, it needs to have been supervised by a teacher who was grading you and helping you develop as a teacher, and second, it needs to have been with K-12 students. It's more of a state certification requirement than individual universities' decision.In a lot of states, you don't need adult ed certification to teach adults (though in some you do). You might want to check around and see if for the job you want, the certification is a requirement. I had several jobs teaching adult ESL in two different states with no adult ed certification.
Here's a recommendation. Teach in a state that has a big shortage of ESL teachers. I came to VA with just my MA in TESOL (no certification) and had an easy time finding a job. Here, you can just start teaching and only need to finish any course requirements within 3 years. I began teaching, took the one psych course the ed dept said I needed, and had my full K-12 ESL certification after just one year. Very easy and much cheaper than going back to college.

There is no online teaching certification that is valid between institutions. I've seen a few web sites that sell you training in online teaching, but that's not the same thing.If you are certified to teach and want to teach students in the field or level for which you are certified, you'll need to find some online sites that are hiring. Start with a search for online schools in your state (because of the certification issue) and look at their hiring information.
(Note: Pay attention to whether you will be an employee or self-employed. Self-employed means about 1/4 of your pay goes to taxes, social security, etc.)
I know there are many opportunities for certified teachers, especially at the high school level.
If your current teaching post has any opportunities for teaching online (even if it's an adult ed, non-credit course), grab one. It will be useful experience. Most online colleges (I've taught at 3) run their own training programs for online instructors. I don't know if the K-12 schools do that as well.

As you get to know the students more, you might want to share more about yourself, so as to personalize the class-- like in a real classroom. But, initially, I think I'd keep it professional. There's always the off chance someone might complain.
