I am an ESL teacher and have taught elementary, middle, and high.Take the regular curriculum of any subject, such as English I, History, etc. and adapt it for ESL students. I highly recommend that you follow the SIOP model and incorporate its features.
You don't say what grades and levels your ESL students are but I would try to make it relevant to what they are learning in other classes. You may find it helpful to talk to their teachers and pre-teach upcoming lessons from their regular classrooms. That way, they will be better prepared for their regular academics.
If your school doesn't offer Sheltered Instruction classes for ESL students, you may want to look into that. There are so many high school requirements for students that Sheltered Instruction allows them to meet course requirements WHILE getting ESL instruction.

No there isn't. The major publishing houses pump out loads of books for ESL teachers every year and there's hard sell to get the schools to use them. That means you could work in one school where they use one book and next they'll use a completely different book.When it comes to useful books for teachers, then there are many good ones out there but certainly no definitive "bible" which is used by all.
