What are parents these days doing to teach their kids about the health/environmental costs of overconsumption?

We Answered:

It has to start in the home. If you show a good example by living and explaning this to your child(ren), then you have done all you can. Unfortunately some people don't care, and you can't change them. Here in California, I think the schools have been bringing environmental issues up, such a recycling, and conservation. They teach the young ones early, so that way they can bring these lessons home. Unfortunatly, even though they and we know better, we don't always practice it with everything we do. The best way we can start is by recycling, and here in California, we have a lot of recycling bins everywhere we go.

Can anyone tell me any good resources to prepare a meal?

We Answered:

Meal planning can be intimidating for beginning cooks. Take a few minutes to organize your recipes and read through this article to help you begin, and soon meal planning will be second nature.
On January 12, 2005, the FDA released a New Food Pyramid, with some changes. The changes aren't significant, except for stressing exercise and increasing the number of fruits, vegetables, and whole grains that you should eat every day.

Plan meals to meet your family's nutrition needs. The old way of planning meals was the Basic Four: Meats, Vegetables and Fruit, Grains, and Dairy. After many nutrition studies, the USDA has created an updated Food Pyramid that should be used as a guideline. This graphic is courtesy of the U.S. Department of Agriculture and the U.S. Department of Health and Human Services. The range helps the Pyramid fit into anyone's caloric needs. For serving sizes, see Thrifty Living.

Meals used to be planned around a chunk of protein, plus a starch like potatoes or rice, a vegetable like green beans, and a glass of milk. Today, meat is considered more of a condiment or flavoring, and diets should be based more on grains, fruits and vegetables. That doesn't mean you can't have a steak or fish fillet for dinner! It just means that you should add more whole grain breads, pastas, vegetables, fruits, rice, and cereals, and reduce the amount of meat served. To begin, here are three key words you should remember every time you plan a meal: color, temperature and texture. The meals you plan should be full of color, the recipes should vary in temperature, and include textures from smooth to crunchy.

First, go through your recipe box, files, cookbooks and other favorite sources and choose 10-20 recipes that you know you can make and that your family likes. Then consider texture, temperature, and color when visualizing your full dinner plate. Color is probably the most important consideration to think about in meal planning. Nutritionists advise making your plate look like a painter's palette. The more different colors on your plate, the more varied and healthy your diet will be. Temperature and texture should be varied to add interest and make the meal more pleasing to the palate. Choose some cold foods, some served at room temperature, and some hot. Crisp, crunchy, smooth, chunky, and tender are all textures you should think about. Now let's choose a recipe to start planning on the next page.

How can I become a holistic health teacher?

We Answered:

Holistic health is sort of a gray area field with the most prominent being Osteopaths who are true medical doctors who are aware of and use holistic methods when they can. There are a lot of self taught holistic practicioners out there who really have no professional training and can do some serious harm to others. In the back of a lot of vegan magazines you can find home study programs that lead to an unofficial "degree". That you have a BA n communications might help you sell your ideas but really does not give a background in holistic health. I am impressed that Osteopathic medicine uses many holistic remedies even though they are not totally dedicated to that or restricted to it.

Why Should the Government Get Involved in Health Care?

We Answered:

There are two schools of thinking. First, you pay when you get sick. Or Second, we all pay for sickness and health using the insurance scheme. In economic term, the productivity of the nation will get better if we choose the second choice. There are many reasons. Healthy people pay for sick people so that they will come back to work. Everyone in our nation can access to the best medical technology we have. It will suppot the industry and create jobs. It's one of the best measure to preent poverty in our nation.

Teaching English Abroad Question?

We Answered:

I'm currently teaching English in Ho Chi Minh City, Vietnam, so all of my knowledge comes from my personal experience.

1) All of the teachers at my school are certified in TESL/TEFL. However, most do not have an education degree, myself included.

2) At my school, foreign teachers make around $15/hr. You'll have to decide if that's enough for you to be able to pay off your loans. My rent here is $300/month if that helps you to get an idea.

3) I have health insurance, but it's really only in case of emergency. I don't have any prescriptions so I'm not sure about that. However, I've been to the doctor's office here and it's only $24 a visit and the antibiotics I got were very inexpensive.

4) I'm not sure about the quality of TESL programs. I came through an organization, TeachOverseas, so my TEFL training was done with them.

5) At my school, students are taught once or twice a week by Vietnamese teachers and then once or twice a week by foreign teachers. When I've taught beginning classes, they've provided me with a Vietnamese TA to help translate if necessary. However, with the intermediate and advanced classes, it's rarely a problem.

Hope some of that helps!
