The only online university worth considering, IMO, is the Open University in the UK. It is expensive however and can take a long time. I would say that if you get a degree you should go more generic and look at an English related degree (e.g. language or literature) which will give you more options than a specific ESL degree (if, indeed, the OU do them).To expand your qualifications have you got a TEFL Certificate yet? That may be a good start if you haven't yet got one.

There are many opportunities in the Middle East to teach and as things (sort of) settle down there a little after recent turbulence more teachers are heading out that way.You'll need a degree and a TEFL certificate minimum to get a job. You have the experience which is good, however you will not be able to go for the higher level jobs without a Masters or something like that.
Saving depends on what kind of person you are. A basic salary could be about 2,500 USD per of which you could save half.
