I think you need to think about career/education NOT education/career.

Decide what job you want to do, and start doing that job, and if you have to, go to school to improve yourself/advance/something.

Don't worry about is "in demand" today: that will change in just a couple of years. Start doing something you like, and see where that leads you.

It might be good to work for a while, and learn more about what you do and don't like. If you can't find a job, then find a good volunteer gig. If you think you might be interested in teaching, volunteer at a local school.

You probably want to do some career exploration (your school's career center can help).

Think about your dream job. Then ask people who are doing things in your dream job, or similar to your dream job, and ask them how you should get started doing that. They will certainly recommend learning, and they may suggest college, but there are many jobs, and many paths.

A person who knows what they want to major in may not get a job, or a way to make a living. A person who knows how they want to make their living can then follow the right path to get to that goal.

Just look for which metropolitan areas are growing rapidly. More people moving in = more kids = more teaching jobs. Here in the metropolitan area of Phoenix, Arizona, many schools simply can't find people to fill their positions. Sadly, this means that if you have both a teaching certificate and a pulse, you will be able to find a job. When I finished my student teaching, I got job offers from three different high schools and got to pick which one I wanted. I hear that the Las Vegas area is in the same boat. The jobs are out there, but you might have to be willing to move to wherever they are.
